Christmas Leftover Power Omelette


  • 2 eggs, whisked
  • 50g leftover chopped ham, turkey or roast chicken
  • ½ cup leftover roast veggies, cut into bite-sized pieces
  • Olive oil, for cooking

Serves 1

  1. Heat a small amount of the olive oil in a pan. ​
  2. Add the chopped leftover meat and veggies, cooking until heated through.  
  3. Pour over the whisked eggs.  
  4. Allow the eggs to cook for a few minutes (until set), then fold in half to serve.
