Christmas Leftover Power Omelette
- 2 eggs, whisked
- 50g leftover chopped ham, turkey or roast chicken
- ½ cup leftover roast veggies, cut into bite-sized pieces
- Olive oil, for cooking
- Heat a small amount of the olive oil in a pan.
- Add the chopped leftover meat and veggies, cooking until heated through.
- Pour over the whisked eggs.
- Allow the eggs to cook for a few minutes (until set), then fold in half to serve.
